In a small bowl, add water and sprinkle gelatin on top. Allow to dissolve. Place wine in a small saucepan and heat just to boiling over medium high heat. Add 2 tbsp honey and taste. Add the gelatin mixture to the red wine and stir thoroughly. If not sweet enough, add additional honey to taste. Divide the mixture among 4 serving dishes and add berries to each serving. Chill for 2 hours or until set.
Top chilled gelatin with a scoop of coconut cream and serve.
Whip heavy cream and sweeten with coconut sugar or honey. Or mix coconut cream with honey. Serve gelatin garnished with cream.
