In a small bowl, add water and sprinkle gelatin on top. Allow to dissolve. Place wine in a small saucepan and heat just to boiling over medium high heat. Add 2 tbsp honey and taste. If not sweet enough, add an additional tbsp or to taste. The flavor should be a bit too sweet as adding water and chilling will diminish the sweetness.
Pour the wine into the gelatin and water and stir thoroughly. Divide the mixture among 4 serving dishes and add berries to each serving. Chill for 2 hours or until set.
Open the coconut milk and scoop off the cream layer into a small bowl. Reserve the remaining liquid for soups or smoothies. Add 1 tbsp honey, mixing thoroughly and tasting. Add additional honey if desired.
Top chilled gelatin with a scoop of coconut cream and serve.
